Tasty Tuesday – vanilla poppyseed cake

Today, I have another edition of Tasty Tuesday for ya!

This week’s recipe is actually a family recipe from my hubby’s fam – and one of their all time favorites!  His mom has been making this cake for all four of her son’s birthdays for many, many years.  So this recipe is actually hers, not mine, but she has graciously let me share it so you can all enjoy too.

I tend to give every single detail of the cooking process to try and help you through it, but today, I want to share the recipe just as she has it!  I did take lots of photos so you can see it in process, but here is the recipe:

Mom’s (my MIL, Vicki) Poppyseed Cake

Ingredients:
  • one box “Super Moist” yellow cake mix
  • 2 small instant vanilla pudding mixes (french vanilla if you can find it)
  • 1 cup sour cream
  • 1/2 cup cooking sherry
  • 1/2 cup vegetable oil
  • 4 eggs
  • poppyseed – 1-2 tablespoons as you like

*Need bundt pan for this recipe*

Recipe:

In the bundt pan, spray with nonstick cooking spray and sprinkle a little of the cake mix over the cooking spray to flour it.

Mix oil, sour cream, eggs, cooking sherry together.  Add cake mix and mix until well combined.  Then add the pudding mixes and poppyseed – this will make the mixture thicker.  Put in floured bundt pan.  Bake at 350 degrees in the oven for 50 minutes – 1 hour.  Check with a toothpick after 50 minutes – you don’t want to overcook this cake.

 (After – fluffs up and gets thicker) Make sure the mixture is evenly flat along the pan

I cool it in the pan for 5 minutes before transferring it to either a cooling rack or cutting board. Sprinkle with powdered sugar for a little extra somethin’ somethin’  

And there you have it!  It’s that easy!  And even more delicious than it is easy.

This is my husband’s favorite cake, hands down.  He loves eating it as a breakfast treat, or after meals as a dessert.  I’m not even a sweets person and I eat this anytime it’s around.  This takes about 5 minutes of prep (+ baking time) and is a real crowd pleaser.  Try it – you will love it!
