Let’s make dinner together the EASY way, with Walmart+

A few weeks ago, a girlfriend of mine asked me how I make a certain recipe that I haven’t made in months  and I was reminded of how EASY it was when I was breaking down how to make it.

It quickly inspired me to grab the ingredients for the dish – chicken pesto parmesan pasta – the next time I was at the store.  I made it (recipe below) and my entire fam just gobbled it up.  So this week, when I asked what I should put in the grocery order I was already making with my Walmart+ membership, our older daughter Isla said she wanted that “dish with the noodles and the green stuff” and I knew this dish was going to be back in our go-to arsenal.

 

Here’s the thing.  Lately, I’ve felt a bit overwhelmed with some fun new projects I’ve put on my plate.  I’ve also had a flare up with some back issues I chronically have.  But it’s super important to me that I try and make the best meals I can for my fam.  I realized a while back that it’s possible to do that, as long as I use my resources to my advantage… which is why I constantly use Walmart+.  I’m a huge fan of their benefits and the quality and freshness of their ingredients.  I’ve also always found that they have reasonable pick up and delivery options and I don’t feel like I have to sacrifice on my ingredients or goods.  I really enjoy grocery shopping in store, but there’s something to be said for being able to add to a list with the ease of an app on your phone and then everything on that list somewhat magically 😉 being dropped off at your front door.  Instead of spending that time in store, I’m spending it either working or resting my back.  And that, my friends, is priceless!

 

So, all that being said, here is the recipe to that easy dish, and you can get all of these fresh ingredients with your Walmart+. membership

 

Slow Cooker Pesto Chicken & Parm Pasta

 

INGREDIENTS:

 

  • 1 jar of pesto (this one is my favorite) – could get 2 if you like extra saucey
  • 1 bag of egg noodles 
  • 3-4 chicken breasts
  • 2-3 tbs butter
  • ½ cup starchy cooking liquid (pull off from noodles right before draining)
  • ½ cup parmesan cheese + more for topping 
  • (optional) crushed red pepper to taste
  • (optional) tomatoes sliced to top
  • (optional) French bread on the side– this refrigerated one is my favorite because you can cook it up to serve and it stays good in the fridge for a long time until you use it

 

RECIPE:

 

Take the jar of pesto and chicken breast and put in the slow cooker on high for 3.5 hours.  I put about ⅓ of the jar on the bottom of the slow cooker, then the chicken, then top the chicken with the rest of the pesto.  I add a little salt and pepper and crushed red pepper, because we like a little heat.

 

As the 3.5 hours draws to a close, shred the chicken and put back in the crockpot and stir together with the juices.  Cover to keep warm.

 

Then, cook the egg noodles to al dente in salted water.  Reserve ½ a cup of the cooking liquid prior to straining.  Return the noodles to the same pot and add 2-3 tbs butter and toss.  Then add the cooking liquid and continue to stir.  Once butter and cooking liquid are combined, add the parmesan cheese and continue to stir until the noodles are evenly coated and look nice and glossy.

 

Serve the chicken on top of the buttered noodles and top with more parm, crushed red pepper, and even tomatoes, if you desire!  Also serve with some delicious crusty french bread for mopping.
